Elijah McCoy is a running back from Midland, Texas, who played three seasons of varsity football at Midland High School. During his senior season, he rushed for 2,269 yards on 262 carries with 31 touchdowns, including 360 yards and seven touchdowns in a win over San Angelo Central. In 2023, he recorded 1,548 yards on 236 carries and 22 touchdowns. McCoy, a recruiting services three-star prospect with a rating of 0.8578, joined UTEP as a true freshman in 2025. He appeared in six games, recording 47 rushing yards on 15 carries with a long run of 12 yards and one reception for 3 yards.
