Eric Olsen is a tight end from St. George, Utah, who transferred to Oregon State after four seasons at Utah Tech. At Desert Hills High School, he earned three letters and was selected first-team all-league and all-state as a senior with 46 receptions for 737 yards and seven touchdowns, helping lead his team to an undefeated region title. Over 39 games from 2022–25 with Utah Tech, Olsen caught 70 passes for 842 yards and three touchdowns while rushing 13 times for 45 yards. In 2025, he had 52 receptions for 583 yards and two touchdowns, including a career-long 49-yard catch and 107 yards against Central Arkansas.
