As a freshman at WSU in 2024, he appeared in all 12 games with seven starts, rushing 137 times for 735 yards and four touchdowns while adding 11 receptions for 108 yards and one score. In his first season with the Utes in 2025, Parker played all 13 games and recorded 149 carries for 981 yards and six rushing touchdowns, along with 13 receptions for 185 yards and three receiving touchdowns. He was named to the 2025 Big 12 All-Conference Third Team and led Utah with 88.6 all-purpose yards per game.
