Griffin Empey is a 6'3", 302-pound center from Stoughton, Wisconsin, who redshirted in 2023 before appearing in 11 games as a freshman left guard in 2024. He earned All-America honors from Stats Perform, FCS Football Central, and Phil Steele as a freshman and made the MVFC Honor Roll. In 2025, Empey started all 13 games at right guard, recording a 91% overall grade on 665 snaps with one sack allowed and 22 impact blocks. He earned first-team All-America selections from the Associated Press and Phil Steele, second-team honors from the AFCA and FCS Football Central, and third-team recognition from Stats Perform, while also being named All-MVFC first team and MVFC Offensive Lineman of the Week on 9/29.
