Jace Gilbert is a 6'5", 270-pound left defensive end from Waukesha, Wisconsin, who played at Arrowhead High School under coach Matt Harris. He was a three-star recruit ranked as the No. 96 defensive tackle nationally by national outlets and No. 8 in Wisconsin by the composite recruiting rankings, committing to Iowa State over Illinois and Wyoming. Gilbert redshirted in 2024 and appeared in the Pop-Tarts Bowl against No. 15 Miami. In 2025, he played in all 12 games with starts against Arizona and Cincinnati, recording 18 tackles, including 3.0 for a loss, one sack, a forced fumble, and a fumble recovery. He earned Academic All-Big 12 honors in 2025.
